Acipenser gueldenstaedtii, commonly know as Russian Sturgeon or “Osetra,” live in coastal areas and prefer sandy beds and mudflats. They feed on small fish, mollusks and crustaceans, and reproduce in rivers from May until June. They have done their best to produce a similar environment for this ancient fish in their Greek farm, which is now Eco-Certified.
Flavor: Noted for its bright amber brown-black, medium grain size, and a clean rich nutty finish. This product is the perfect choice for caviar bumps and pairs beautifully with any brut Champagne. Ingredients: Farmed Russian Sturgeon roe and salt.

Tsar Nicoulai Caviar is based in California and produces caviar, smoked fish, and other seafood products. Their main farm resides in Wilton, where they produce American White Sturgeon caviar. They also have a sister farm in Greece and a farm in France, where they produce Baerii (Siberian) caviar and Osetra (Russian) caviar, respectively. In fact, their farm in California is the only eco-certified sturgeon farm in the United States. They manage the entire life cycle of the fish-- hatching, raising, and taking care of the sturgeon as they mature. Rooted in the “Farm-to-Table” philosophy, they believe in the equal consideration of life, land, and home in the food industry.
